  • 1 large apple (Granny Smith or Honeycrisp), julienned
  • 1/2 cup dried cranberries
  • 1/4 cup sliced almonds or sunflower seeds (optional)
  • 2 green onions, thinly sliced (optional)
  • 1/4 cup fresh parsley, chopped (optional)
  • 1/2 cup mayonnaise (or Greek yogurt)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon Dijon mustard
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a large mixing bowl, combine the sliced cabbage, julienned apple, dried cranberries, optional almonds/sunflower seeds, green onions, and parsley.
  2. In a separate small bowl, whisk together the mayonnaise (or Greek yogurt), apple cider vinegar, honey or maple syrup, Dijon mustard, salt, and pepper.
  3. Pour the dressing over the coleslaw mixture and toss until well coated.
  4. Chill in the refrigerator for at least 30 minutes to allow flavors to meld before serving.
