  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 pound gnocchi
  • 2 cups sharp cheddar cheese, shredded
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 cups chopped fresh spinach
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter

Instructions

  1. In a large pot over medium heat, cook the chopped turkey bacon until crispy. Remove with a slotted spoon and set aside.
  2. In the same pot with the remaining grease, sauté the diced onion until translucent (about 5 minutes). Add minced garlic and cook for another minute until fragrant.
  3. Stir in the flour to create a roux; cook for about 1-2 minutes.
  4. Gradually whisk in chicken broth; bring to a simmer while stirring constantly.
  5. Stir in heavy cream, thyme, and smoked paprika to enhance flavors.
  6. Add gnocchi to the pot and cook until they float (about 3-5 minutes).
  7. Reduce heat to low; stir in shredded cheddar cheese until melted and smooth.
  8. Season with salt and pepper to taste. Sauté spinach in olive oil until wilted; mix into the soup along with reserved bacon pieces.
