Ingredients

Scale
  • 1.5 lb flank steak
  • 2 teaspoons Dijon mustard
  • 4 cloves minced garlic
  • 3 tablespoons soy sauce or coconut aminos
  • 3 tablespoons olive oil
  • 1/2 cup balsamic vinegar
  • 3 large zucchini
  • 8 ounces feta cheese
  • 3 tablespoons heavy cream or milk
  • Salt and black pepper to taste

Instructions

  1. Marinate the Steak: In a large dish, combine Dijon mustard, minced garlic, soy sauce, olive oil, and balsamic vinegar. Season flank steak with salt and pepper; add to marinade and refrigerate for at least 2 hours (or overnight).
  2. Preheat Grill: Heat outdoor grill to high (about 450°F). Brush grates with oil to prevent sticking.
  3. Grill the Steak: Remove steak from marinade, shaking off excess. Grill for about 3-5 minutes per side until internal temperature reaches 135°F for medium-rare. Let rest for 10 minutes.
  4. Grill Zucchini: Brush zucchini slices with olive oil and sprinkle with salt; grill alongside steak for about 2-3 minutes per side until tender.
  5. Prepare Glaze: Boil reserved marinade in a saucepan until thickened (2-3 minutes).
  6. Whip Feta: Blend feta cheese with cream until smooth.
  7. Assemble: Slice rested steak against the grain and serve over grilled zucchini with whipped feta and drizzle of balsamic glaze.
