  • 2 medium sweet potatoes
  • 1 large yellow onion
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder (or chili powder)
  • 1 medium head broccoli
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (divided)

Instructions

  1. Preheat the oven to 400°F. Peel and chop sweet potatoes into ½” chunks and onion into one-inch pieces. Toss together on a lined sheet pan with olive oil, 1/8 teaspoon salt, garlic powder, and chipotle powder until coated.
  2. Roast sweet potatoes and onions at 400°F for about 20 minutes until tender and caramelized.
  3. After roasting for 20 minutes, toss sweet potatoes and push them to one side of the pan. On the other side, add chopped broccoli tossed with olive oil and the remaining salt. Place chicken breasts in the center and brush with ¼ cup BBQ sauce. Return to oven for another 15-20 minutes.
  4. Once cooked through (chicken should reach an internal temperature of 165°F), shred chicken with two forks and mix it with remaining BBQ sauce before serving in bowls.
