  • 2 large sweet potatoes
  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 to 1.5 cups BBQ sauce
  • 1 can black beans (15 oz), rinsed and drained
  • 1 cup corn, frozen (thawed) or canned (drained)
  • 1/2 small red onion, very thinly sliced
  • 1/4 cup fresh cilantro, roughly chopped
  • 12 ripe avocados, sliced or diced
  • 1 cup shredded cheese (optional)
  • Greek yogurt (optional)
  • Pickled jalapeños (optional)
  • Lime wedges

Instructions

  1. Preheat your oven to 425°F (220°C). Toss sweet potato cubes with olive oil, smoked paprika, garlic powder, salt, and pepper. Roast for about 25 minutes until tender and crispy.
  2. In a pot, cover chicken with water or broth and optional aromatics. Bring to a boil, then simmer for 15-20 minutes until cooked through. Shred the chicken and toss with BBQ sauce.
  3. Assemble each bowl starting with roasted sweet potatoes, topped with shredded chicken, black beans, corn, red onions, cilantro, avocado, cheese if desired, Greek yogurt or sour cream, pickled jalapeños for spice, and a squeeze of lime juice.
