  • 1 pound boneless skinless chicken breast
  • 1 cup low sugar BBQ sauce
  • 1 cup uncooked quinoa
  • 2 cups water
  • 1 (15 ounce) can black beans
  • 2 cups shredded red cabbage
  • 1 cup sweet corn
  • ¼ cup finely diced red onion
  • 2 roma tomatoes, diced
  • 1 jalapeño, thinly sliced
  • 1 avocado, diced or sliced
  • Healthy ranch dressing

Instructions

  1. Cook the Chicken: In a slow cooker, place chicken breasts and coat with BBQ sauce. Cook on high for 2.5 – 3 hours until tender. Alternatively, grill marinated chicken over medium-high heat until cooked through.
  2. Prepare the Quinoa: Rinse quinoa under cold water, combine with water in a pot and bring to a boil. Reduce heat and simmer covered for about 15 minutes until fluffy.
  3. Chop Veggies: While the chicken and quinoa cook, chop your avocado, dice tomatoes, and slice jalapeños.
  4. Assemble Bowls: Layer quinoa at the bottom of each bowl followed by shredded BBQ chicken and top with black beans, cabbage, corn, onion, tomatoes, jalapeños, and avocado. Drizzle with ranch dressing and garnish with cilantro and scallions.
