  • 1/2 cup vanilla protein powder
  • 1/4 cup freeze-dried blueberries
  • 1/4 cup unsweetened applesauce
  • 1/4 cup cream cheese or vegan alternative
  • 2 tablespoons honey or maple syrup
  • 1/4 cup frozen blueberries, thawed
  • 2 tablespoons cream cheese for glaze
  • milk for glaze
  • vanilla extract for glaze

Instructions

  1. Grind freeze-dried blueberries into a fine powder.
  2. In a bowl, mix rolled oats, protein powder, blueberry powder, and optional chia/flax seeds.
  3. In another bowl, whisk applesauce, softened cream cheese, and honey/maple syrup.
  4. Combine wet and dry mixtures until well mixed.
  5. Fold in thawed blueberries gently.
  6. If too dry, add milk as needed for consistency.
  7. Roll into bite-sized balls and place on parchment-lined plate.
  8. Prepare glaze by mixing cream cheese, milk, vanilla extract, and optional powdered sugar.
  9. Drizzle glaze over bites and decorate with fresh blueberries.
  10. Chill for at least 30 minutes before serving.
