  • 250 g digestive crackers
  • 75 g butter
  • 300 g fresh blueberries
  • 800 g cream cheese (room temperature)
  • 260 g granulated sugar
  • 200 g sour cream (room temperature)
  • 4 large eggs
  • 1 tbsp all-purpose flour
  • 1 tbsp granulated sugar
  • 2 tsp lemon juice
  • 110 g all-purpose flour
  • 80 g dark brown sugar
  • 1 1/2 tbsp cornstarch
  • 2 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Crush digestive crackers in a food processor and mix with melted butter and sugar. Press into the bottom of a springform pan and bake for 10 minutes.
  2. Toss blueberries with sugar, flour, and lemon juice in a bowl. Set aside.
  3. Beat cream cheese with granulated sugar until smooth; add sour cream, cornstarch, and vanilla extract. Beat in eggs one at a time until well combined.
  4. Layer half of the cheesecake batter over the crust, followed by half of the blueberry mixture. Add remaining batter and top with leftover blueberries.
  5. Bake for 60-70 minutes until set but slightly jiggly in the center. Allow cooling gradually before refrigerating for at least four hours.
