  • 1 cup old-fashioned oats
  • ¾ cup all-purpose flour (or gluten-free flour blend)
  • ⅓ cup light brown sugar
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 6 tbsp unsalted butter (or coconut oil), melted
  • 1 cup blueberries (fresh or frozen)
  • ¼ cup granulated sugar
  • 2 tsp cornstarch

Instructions

  1. Preheat your oven to 375°F (190°C) and line an 8-inch square baking pan with parchment paper.
  2. In a large bowl, mix together oats, flour, brown sugar, baking soda, salt, and optional cinnamon.
  3. Add melted butter and vanilla extract to the dry ingredients and stir until crumbly.
  4. Press half of the oat mixture into the bottom of the prepared pan to form a base.
  5. In another bowl, combine blueberries with granulated sugar and cornstarch; toss until coated.
  6. Spread the blueberry mixture over the oat base and crumble the remaining oat mixture on top.
  7. Bake for 35-40 minutes until golden brown and bubbly.
  8. Allow to cool completely before slicing into squares.
