  • ¾ cup shredded mozzarella or Monterey Jack cheese
  • 4 oz goat cheese
  • 1 cup thinly sliced onions
  • ¼ cup white grape juice or vegetable stock
  • 2 tbsp olive oil
  • 1 cup roasted butternut squash (diced)
  • 3 large eggs
  • 1½ cups whole milk or half-and-half
  • Fresh thyme, salt, black pepper, and nutmeg

Instructions

  1. Preheat your oven according to pie crust instructions. Fit the pie crust into a 9-inch pie plate.
  2. In a skillet, heat olive oil over medium heat and add sliced onions with a pinch of salt. Cook until golden brown and tender (15-20 minutes).
  3. Toss diced butternut squash with olive oil, salt, and pepper; roast on a baking sheet for about 25-30 minutes at 400°F (200°C).
  4. In a bowl, whisk together eggs and milk. Stir in thyme, nutmeg, roasted squash, caramelized onions, mozzarella, and crumbled goat cheese.
  5. Pour filling into the crust and bake at 375°F (190°C) for about 40 minutes until set.
