  • 1 ½ cups softened butter
  • ¾ cup granulated sugar
  • 1 ½ cups packed brown sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • 3 ¾ cups all-purpose flour
  • 2 ½ cups crushed graham crackers
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 16 oz softened cream cheese
  • 7 oz vegan marshmallow fluff
  • 2 cups powdered sugar
  • ⅓ cup caramel dip
  • Coarse sea salt for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add in eggs and vanilla extract; mix well.
  3. In another bowl, whisk together flour, crushed graham crackers, baking soda, baking powder, and salt. Gradually combine dry ingredients into the wet mixture without overmixing.
  4. Scoop out dough portions (about ½ cup each), roll into balls, flatten slightly, and place on the baking sheet. Bake for 12-15 minutes until golden around the edges. Allow to cool for about 5 minutes before transferring to a wire rack.
  5. For the frosting: Beat softened cream cheese until smooth; mix in vegan marshmallow fluff and gradually add powdered sugar until fluffy.
  6. Once cookies have cooled completely, pipe frosting onto each cookie. Drizzle warmed caramel dip over the frosting and sprinkle with coarse sea salt.
