  • 3/4 cup salted butter (almost melted)
  • 1 1/2 cups packed brown sugar
  • 3 tablespoons cinnamon
  • 1/2 cup heavy cream (for pouring over the risen rolls)
  • 6 ounces cream cheese (softened)
  • 1/3 cup salted butter (softened)
  • 2 cups powdered sugar
  • 1/2 tablespoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Activate the yeast by mixing warm milk with instant yeast; let it froth.
  2. Combine eggs, melted butter, salt, sugar, cinnamon, carrots, and coconut into the yeast mixture.
  3. Gradually add flour until combined; rest for 5 minutes.
  4. Knead the dough until smooth and elastic, adding more flour if necessary.
  5. Let the dough rise in a greased bowl until doubled in size.
  6. Prepare the filling by mixing softened butter, brown sugar, and cinnamon.
  7. Roll out the dough, spread filling evenly, and tightly roll it up.
  8. Slice into rolls and allow them to rise again before baking with warm heavy cream poured over them.
  9. Bake at 350°F for 27–30 minutes until golden brown.
  10. Frost with a mixture of cream cheese, softened butter, powdered sugar, and vanilla.
