  • ½ cup brown sugar
  • 1 tsp baking powder
  • 1 tsp ground cinnamon

  • ½ cup vegetable oil (or applesauce)
  • 2 large eggs (room temperature)
  • 2 tsp vanilla extract
  • 1 ½ cups grated carrots (freshly grated)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugars, baking powder, cinnamon, and salt.
  3. In another bowl, mix the vegetable oil (or applesauce), eggs, and vanilla until smooth. Stir in grated carrots.
  4. Combine wet and dry ingredients gently until just mixed, avoiding overmixing.
  5. Fill muffin tins two-thirds full with batter and bake for 18–20 minutes or until a toothpick comes out clean.
  6. Allow cupcakes to cool before frosting with cream cheese frosting made from cream cheese, butter, powdered sugar, and vanilla.
