Ingredients

Scale
  • 1 lb Bavette steak
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 3 garlic cloves
  • 1/4 cup barley tea
  • 1 cup heavy cream
  • Salt and pepper

Instructions

  1. Remove the bavette steak from the refrigerator and let it rest for about 20 minutes. Pat dry and season with salt, pepper, and garlic powder.
  2. Heat olive oil in a cast iron skillet over medium-high heat. Sear the steak for 4–5 minutes on each side until medium-rare (130°F / 54°C). Let rest before slicing.
  3. In the same skillet, melt butter over medium heat and sauté minced garlic until fragrant (1–2 minutes).
  4. Add barley tea, scraping up flavorful bits from the pan, and simmer for 2–3 minutes.
  5. Stir in heavy cream and simmer until thickened (about 5 minutes). Adjust seasoning if needed.
  6. Slice the rested steak against the grain and drizzle with sauce before serving.
