  • ½ cup hot water
  • 2 chamomile tea bags
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • For Honey Frosting: 1 cup unsalted butter, softened, ¼ cup honey, 3 ½ cups powdered sugar, 2 tablespoons heavy cream, cold

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Steep chamomile tea bags in hot water for about 10 minutes.
  3. In one bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In another bowl, cream butter and sugar until fluffy.
  5. Add eggs one at a time and mix in vanilla.
  6. Alternate adding dry ingredients and steeped tea to butter mixture until just combined.
  7. Fill cupcake liners two-thirds full and bake for 12-16 minutes until a toothpick comes out clean.
  8. Cool completely on a wire rack before frosting with honey frosting.
