  • 1 whole skirt steak (1.52 pounds)
  • ½ teaspoon kosher salt
  • ⅓ cup olive oil (or avocado oil)
  • ¼ cup apple vinegar (or apple juice vinegar)
  • 3 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 4 cloves garlic (finely minced)
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon minced fresh rosemary
  • 1 teaspoon ground pepper

Instructions

  1. Trim excess fat from the skirt steak and cut into manageable pieces.
  2. Season the steak with kosher salt and place it in a resealable bag.
  3. In a bowl, whisk together olive oil, apple vinegar, soy sauce, Dijon mustard, garlic, thyme, and rosemary. Pour over the steak and marinate for at least 2 hours (preferably overnight).
  4. Preheat your grill or skillet over high heat. Remove the steak from marinade, pat dry, and season with pepper.
  5. Grill each piece for 3–4 minutes per side until charred and cooked to an internal temperature of 125-130°F.
  6. Let rest for 10 minutes before slicing against the grain.
