  • ½ teaspoon garlic powder
  • Kosher salt and pepper (to taste)
  • 2 tablespoons olive oil (divided)
  • 3 garlic cloves (minced)
  • ⅔ cup chicken broth
  • 1 pinch Italian seasoning
  • 1 cup almond milk (or any plant-based milk)
  • 1 tablespoon gluten-free flour
  • 2 cups fresh baby spinach
  • ½ cup grated parmesan cheese

Instructions

  1. Season chicken cutlets with garlic powder, salt, and pepper on both sides.
  2. Heat 1 tablespoon olive oil in a skillet over medium heat and cook chicken for 3-4 minutes per side until golden brown. Set aside.
  3. In the same skillet, add remaining olive oil and sauté minced garlic until fragrant (about 30 seconds).
  4. Pour in chicken broth and add Italian seasoning; simmer until reduced by half.
  5. Whisk together gluten-free flour and almond milk until smooth, then stir into the pan to thicken the sauce.
  6. Add baby spinach and return the chicken to the skillet; simmer for an additional 8-10 minutes until fully cooked.
