  • 8 oz angel hair pasta
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup chicken broth
  • 1/2 cup chicken broth (substitute for white grape juice)
  • 1/4 cup freshly squeezed lemon juice
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • Lemon wedges for serving

Instructions

  1. Cook the angel hair pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium-high heat, combine 1 tablespoon olive oil and 1 tablespoon butter. Add seasoned chicken tenders and cook until golden brown; remove from skillet.
  3. In the same skillet, add remaining olive oil and butter. Sauté minced garlic and red pepper flakes until fragrant (about 30 seconds).
  4. Pour in chicken broth and chicken broth (substitute for white grape juice), along with lemon juice. Stir in Italian seasoning and simmer for three minutes.
  5. Return the cooked chicken to the skillet and allow it to heat through in the sauce for a few minutes.
  6. Gently toss in the cooked pasta along with grated Parmesan cheese and fresh parsley.
  7. Serve hot with extra Parmesan and lemon wedges on the side.
