  • 1 1/2 cup water
  • 1 medium bell pepper, diced
  • 1/2 medium red or yellow onion, diced
  • 1 cup grape tomatoes, halved
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup frozen corn, thawed
  • 1 medium avocado, cubed
  • Fresh cilantro, chopped
  • 1/3 cup avocado oil or olive oil
  • Juice of 2 limes
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon fine salt
  • Pinch of cayenne (optional)

Instructions

  1. Rinse quinoa under cold water. In a saucepan, bring 1.5 cups water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 10-15 minutes until water is absorbed. Fluff and let cool.
  2. Whisk together lime juice, oil, cumin, garlic powder, chili powder, and salt in a small bowl.
  3. In a large bowl, combine cooled quinoa with bell pepper, onion, tomatoes, black beans, corn, cilantro, and avocado. Drizzle vinaigrette over the top and toss gently.
  4. Serve immediately or chill in the refrigerator for enhanced flavors.
