  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar (divided)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 cup melted dark chocolate, cooled
  • 1 cup fresh strawberries, pureed
  • ¼ cup granulated sugar (for strawberry swirl)
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix chocolate cookie crumbs with melted butter and sugar. Press into the bottom of a springform pan and bake for about 10 minutes. Allow to cool.
  2. In another bowl, beat softened cream cheese until smooth. Gradually add 1 cup granulated sugar and mix in eggs one at a time. Add vanilla extract and sour cream; fold in cooled melted dark chocolate.
  3. For the strawberry swirl, puree fresh strawberries with remaining sugar and lemon juice until smooth.
  4. Pour chocolate filling over the cooled crust. Spoon dollops of strawberry puree on top and gently swirl using a knife.
  5. Bake for 50-60 minutes until edges are set but center is slightly jiggly. Cool gradually in the oven with the door ajar for an hour.
  6. Chill in the refrigerator for at least four hours before serving.
