  • 1 bunch cilantro
  • 4 garlic cloves
  • 1 lime (juiced)
  • 1 tablespoon apple cider vinegar
  • 4 tablespoons olive oil
  • 1 jalapeño or red chili
  • 4 cups baby spinach
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup corn kernels
  • 1 large avocado (diced)

Instructions

  1. In a small food processor, blend cilantro, garlic, lime juice, apple cider vinegar, olive oil, jalapeño, salt, and pepper until nearly smooth.
  2. Coat chicken breasts in half of the marinade; refrigerate for at least one hour.
  3. Preheat your grill to medium heat and grill the chicken for about 12-14 minutes until fully cooked. Let rest before slicing.
  4. In a large bowl, combine baby spinach, cherry tomatoes, corn kernels, and diced avocado.
  5. Add sliced grilled chicken to the salad mixture and drizzle with remaining marinade. Toss gently to combine.
