  • 1 large egg yolk
  • 1 and 1/2 teaspoon pure vanilla extract

  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 3 (8 ounce) packages (24 oz) cream cheese
  • 1 cup granulated sugar (for cheesecake)
  • 1 tablespoon cornstarch
  • 2 tablespoons instant coffee granules
  • 2 tablespoons hot water
  • 2 teaspoons pure vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 3 large eggs
  • 1 large egg yolk
  • 5 oz dark chocolate, chopped
  • 1 tablespoon vegetable shortening
  • 1 and 1/2 cups dark chocolate chips
  • 1/2 cup heavy cream
  • 1 tablespoon instant coffee granules
  • 6 tablespoons powdered sugar
  • Chocolate covered coffee beans for garnish
  • Cocoa Powder for dusting

Instructions

  1. Preheat oven to 350°F (180°C) and prepare a 9-inch springform pan.
  2. Melt butter; whisk in sugars, eggs, and vanilla. Sift in flour and cocoa; mix until combined.
  3. Bake brownie base for 20-25 minutes; cool completely.
  4. Lower oven to 300°F (150°C). Beat cream cheese until smooth; mix in sugar, cornstarch, dissolved coffee, sour cream, and heavy cream.
  5. Add eggs one at a time; pour over cooled brownie base and bake for about an hour and fifteen minutes.
  6. Cool in the oven with the door ajar for an hour before refrigerating overnight.
  7. Prepare ganache with dark chocolate and heavy cream; chill before serving.
