  • Zest of 1 orange
  • 125 g unsalted butter (room temperature)
  • 1 tsp vanilla extract
  • 180 g plain flour (all-purpose)
  • 75 g dried cranberries (finely chopped)
  • 120 g powdered icing sugar
  • 30 ml orange juice
  • 1 tsp unsalted butter (melted)

Instructions

  1. In a bowl, combine caster sugar and orange zest; rub together to release oils.
  2. Cream softened butter and orange sugar mixture until pale and fluffy.
  3. Gradually mix in flour and chopped cranberries until just combined.
  4. Shape dough into a disc; chill if too soft.
  5. Roll out dough to about half a centimeter thick and cut into shapes; chill again before baking.
  6. Preheat oven to 170°C (335°F) and bake for 12-15 minutes until golden around edges.
  7. Cool slightly on trays, then glaze by dipping in the icing mixture made from powdered sugar, orange juice, and melted butter.
