  • 4 ears fresh corn on the cob
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tbsp freshly squeezed lime juice
  • 1 tsp chili powder
  • 1/2 cup crumbled cotija cheese (or feta)
  • 1/4 cup chopped cilantro (optional)
  • Salt to taste

Instructions

  1. Shuck the corn, removing all silk strands. Boil the corn in salted water for 5-7 minutes until tender.
  2. Grill the boiled corn over medium-high heat for about 10 minutes until charred. Let cool before cutting off the kernels.
  3. In a large bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, and salt until smooth.
  4. Fold in the corn kernels and crumbled cotija cheese (and cilantro if using). Mix gently until well combined.
  5. Cover and chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
