  • 6 oz. dry Farfalle (Bowtie) Pasta
  • 8 oz. Chicken Breast
  • 2 tsp. Cajun Seasoning
  • 2 tsp. Avocado oil
  • 1/2 cup diced Orange Bell Pepper
  • 2/3 cup thinly sliced Zucchini
  • 2 tbsp. minced Jalapeño
  • 1/3 cup diced Tomato
  • 1/3 cup chopped Green Onion (divided)
  • 1 cup Half and Half (or heavy cream)
  • 1/4 cup grated Parmesan Cheese
  • Salt & freshly cracked Black Pepper

Instructions

  1. Season chicken breast with Cajun seasoning on both sides and let rest for 10-15 minutes.
  2. In a large nonstick pan, heat avocado oil over medium heat and sear the seasoned chicken until golden brown, about 5-7 minutes per side. Set aside.
  3. In the same pan, sauté zucchini, bell pepper, and jalapeño until softened, about 5 minutes.
  4. Add tomatoes, green onions, and tomato paste; cook for an additional minute.
  5. Stir in garlic and crushed red pepper; then add half-and-half and simmer until thickened.
  6. Cook farfalle pasta according to package instructions; drain and toss with the sauce and grated Parmesan cheese.
  7. Serve immediately with extra green onions and crushed red pepper as garnish.
