Prepare the Filling: In a large bowl, combine lump crab meat, mayonnaise (or Greek yogurt), Dijon mustard, fruit juice (or vinegar), beaten egg, breadcrumbs, green onions, red bell pepper, lemon juice, Old Bay seasoning, salt, and pepper. Gently mix to avoid breaking the crab meat.
Assemble the Egg Rolls: Lay an egg roll wrapper on a clean surface in a diamond shape. Spoon two tablespoons of the filling onto the lower half of each wrapper. Fold the bottom corner up over the filling tightly, tuck in the sides, and roll tightly into a cylinder shape. Seal edges with water if necessary.
