  • 2 pounds baby potatoes
  • 3 tablespoons olive oil
  • 3/4 cup Greek yogurt
  • 1/2 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 1/2 lemon, juiced
  • 1 garlic clove, minced
  • Fresh parsley, chopped
  • Dill pickle, chopped
  • Shallot, finely chopped

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Boil the baby potatoes in salted water for 7–8 minutes until fork-tender.
  3. Drain and let cool slightly before patting dry. Smash each potato to about 1/4 inch thick on the baking sheet.
  4. Brush with olive oil and season with salt and pepper. Roast for 45–60 minutes until crispy and golden, flipping halfway through.
  5. In a bowl, whisk together remaining olive oil, Greek yogurt, mayonnaise, Dijon mustard, lemon juice, minced garlic, parsley, dill pickle, and shallots. Season with salt and pepper.
  6. Once potatoes are roasted and slightly cooled, toss them with the dressing in a large mixing bowl.
  7. Garnish with scallions or reserved crispy potato bits before serving.
