  • ½ onion (diced)
  • 1 cup corn (frozen or canned)
  • 1 can black beans (15 oz can)
  • 1 can kidney beans (15 oz can)
  • 1 can crushed tomatoes (15 oz can)
  • 3 cups beef broth
  • 2 cups cooked rice

Instructions

  1. In a crock pot, combine the browned ground beef, taco seasoning, diced onion, corn, black beans, kidney beans, crushed tomatoes, and beef broth. Stir well to mix all ingredients evenly.
  2. Cover the crock pot and cook on low for 4-5 hours or on high for 2-2.5 hours until flavors meld and ingredients are tender.
  3. About 5 minutes before serving, stir in the cooked rice and re-cover until warmed through.
