  • 6 assorted bell peppers
  • 1 large white onion
  • 8 ounces cremini mushrooms
  • 2 pounds sirloin steak
  • 9 slices provolone cheese
  • 3 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced onions and mushrooms with a pinch of salt and pepper. Sauté until softened (5-7 minutes).
  4. Increase heat to medium-high, add sliced steak, season with remaining salt and pepper, and cook until browned (4-5 minutes).
  5. Stuff each bell pepper with the steak mixture and top with provolone cheese.
  6. Place in a baking dish, drizzle with remaining olive oil, cover with foil, and bake for 30 minutes.
