  • 3 large carrots
  • 1 large shallot
  • 1 cup dry French lentils
  • 2 tbsp olive oil
  • 1 tsp maple syrup or honey
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/4 tsp cinnamon
  • 1/2 tsp kosher salt
  • 2 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 34 medjool dates, pitted and finely chopped
  • 1/4 cup castelvetrano olives, pitted and chopped
  • 1/4 cup salted, roasted almonds, chopped (optional)
  • 1/4 cup flat-leaf parsley, finely chopped
  • 2 tbsp fresh mint, chopped
  • Hummus (to serve)

Instructions

  1. Preheat oven to 400°F (200°C). Toss sliced carrots and shallots with olive oil, maple syrup, spices, and salt. Roast for 25-30 minutes until tender.
  2. Rinse lentils and boil them in water for 20-25 minutes until tender but firm. Drain excess water.
  3. In a bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, dates, olives, parsley, mint, and salt. Add cooked lentils and roasted carrots; mix well.
  4. Serve on plates topped with hummus.
