  • 2 tbsp olive oil
  • 1 cup dry French lentils
  • 34 medjool dates, pitted and chopped
  • 1/4 cup castelvetrano olives, pitted and chopped
  • Hummus (for serving)
  • Fresh herbs (parsley and mint)

Instructions

  1. Preheat your oven to 400°F (200°C). Toss sliced carrots and shallots with olive oil, smoked paprika, cumin, cinnamon, and salt. Spread on a baking sheet to roast for about 25 minutes until tender.
  2. Rinse lentils under cold water and cook in boiling water according to package instructions until tender but firm—about 20-25 minutes.
  3. In a large bowl, combine roasted carrots, shallots, cooked lentils, chopped dates, olives, parsley, mint, apple cider vinegar, and Dijon mustard.
  4. Serve by spooning hummus onto plates or bowls topped with the carrot-lentil mixture.
