  • 2 Tbsp olive oil (for roasting)
  • 4 cloves garlic
  • 2 medium shallots
  • 1 lb sliced mushrooms
  • ½ cup breadcrumbs
  • 2 sheets puff pastry
  • 4 oz feta cheese (or plant-based alternative)
  • Whisked egg (or aquafaba for vegan option)

Instructions

  1. Preheat oven to 425°F (218°C). Peel and trim carrots, toss with olive oil, salt, and pepper on a baking sheet, then roast until fork-tender.
  2. In a sauté pan, heat olive oil over medium heat. Add garlic, shallots, thyme, and rosemary; sauté until shallots are soft. Add mushrooms and cook until softened.
  3. Transfer mushroom mixture to a food processor and blend until smooth. Mix in breadcrumbs and salt; chill.
  4. Thaw puff pastry and roll out into one large rectangle by joining two sheets.
  5. Spread mushroom pâté on the pastry, layer roasted carrots on top, and sprinkle with feta cheese.
  6. Roll the pastry over the filling, seal edges tightly with water, and place seam-side down on a baking sheet. Brush with whisked egg.
  7. Bake for 30-40 minutes until golden brown; allow to rest before slicing.
