  • 2 cups sliced mushrooms
  • 34 garlic cloves (minced)
  • 1 tablespoon cornstarch
  • 3 tablespoons aged balsamic vinegar
  • 1 tablespoon honey (heaping or 2 tablespoons)
  • 1 cup chicken broth
  • 1 tablespoon finely chopped parsley (for garnish)

Instructions

  1. Season chicken with salt and pepper. Heat olive oil in a large pan over medium-high heat.
  2. Cook chicken for about 5-6 minutes on each side until golden brown and cooked through. Remove and cover to keep warm.
  3. In the same pan, sauté mushrooms until softened, about 3-4 minutes; season with salt and pepper.
  4. Add minced garlic and cornstarch, stirring for about a minute.
  5. Whisk together balsamic vinegar and honey; pour into the pan and stir until thickened slightly.
  6. Pour in chicken broth, simmering for about 3-4 minutes until sauce thickens.
  7. Return chicken to the pan, spoon sauce over it, garnish with parsley, and serve.
