  • 34 medium carrots (chopped into big chunks)
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1 1/2 cups red lentils
  • 5 cups water (or vegetable broth)
  • 1 lemon (half juiced, half cut into wedges to serve with)
  • Chopped fresh parsley (one bunch, for garnishing)

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté chopped onion, minced garlic, and carrots for 3–4 minutes until softened.
  2. Stir in turmeric, cumin, salt, and pepper; mix well to combine.
  3. Add red lentils and vegetable broth or water; squeeze in half the lemon juice.
  4. Bring to a boil, then cover and reduce heat to low. Simmer for 20–25 minutes until lentils are tender.
