  • 1 lb boneless skinless chicken thighs
  • 3 tbsp potato starch
  • 3 tbsp all-purpose flour
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3 tbsp neutral oil (for frying)
  • 1/2 cup chicken stock (or water & chicken bouillon)
  • 3 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp dark soy sauce
  • 1 tsp cornstarch

Instructions

  1. In a bowl, mix the chicken stock, honey, rice vinegar, dark soy sauce, and cornstarch for the sauce; set aside.
  2. Pat the chicken thighs dry and coat them in a mixture of potato starch, flour, garlic powder, salt, and pepper.
  3. Heat neutral oil in a large pan over medium-high heat. Fry the coated chicken thighs until golden brown (about 7 minutes on each side) and then remove them from the pan.
  4. Sauté minced garlic and green onion in the same pan until fragrant. Pour in the prepared sauce and cook until slightly thickened.
  5. Return the chicken to the pan and simmer for another five minutes until well-coated.
  6. Serve over steamed rice with garnishes like green onions and sesame seeds.
