  • 1 teaspoon sesame oil
  • 1 teaspoon minced garlic
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon cornstarch
  • 2 teaspoons water (for cornstarch slurry)
  • 2 cups cooked rice (jasmine, sushi, or brown)
  • 1 cup steamed broccoli
  • 1/2 cup shredded carrots
  • 1/2 cup edamame (shelled, cooked)
  • 1/2 cup cucumber (thinly sliced)
  • 1/2 cup red cabbage (thinly sliced)
  • 1 avocado (sliced)
  • 2 tablespoons sesame seeds
  • 2 green onions (thinly sliced)
  • Sriracha mayo for drizzling

Instructions

  1. Season salmon fillets with salt and pepper.
  2. Heat oil in a skillet over medium-high heat; add salmon skin-side down and cook for 4-5 minutes on each side until golden brown.
  3. In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, cornstarch mixed with water. Pour this mixture into the skillet once the salmon is cooked; let it simmer until thickened.
  4. In bowls, layer rice first, followed by steamed veggies and glazed salmon. Top with sliced avocado, sesame seeds, and green onions.
