  • 2 large eggs, at room temperature
  • 1 cup low-fat buttermilk
  • 1/2 cup plain fat-free Greek yogurt
  • 2 Tbsp elderflower cordial
  • 1 Tbsp Meyer lemon juice
  • 1/2 cup unsalted butter, at room temperature (for frosting)
  • 1/8 tsp salt (for frosting)
  • 1/2 tsp vanilla extract (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 1 1/2 Tbsp elderflower cordial (for frosting)
  • 1/2 Tbsp Meyer lemon juice (for frosting)
  • 2 tsp meringue powder (for sugared flowers)
  • 2 Tbsp water (for sugared flowers)
  • 1/2 cup superfine sugar, divided (for sugared flowers)

Instructions

  1. Prepare the sugared flowers by mixing meringue powder and water; coat edible flowers in sugar and let dry.
  2. Preheat oven to 350°F (175°C) and line muffin pans.
  3. Whisk together flour, baking powder, baking soda, and salt.
  4. Cream butter and sugar until fluffy; add eggs one at a time.
  5. Alternate adding dry ingredients and buttermilk mixture to the batter until just combined.
  6. Bake cupcakes for about 18-19 minutes until golden brown; brush tops with elderflower syrup while warm.
  7. Make frosting by beating butter until creamy and gradually mixing in powdered sugar and liquids.
  8. Frost cooled cupcakes and decorate with sugared flowers.
