  • 4 large sweet onions, thinly sliced
  • Kosher salt and pepper
  • 1 pound short cut pasta, cooked
  • 3 tablespoons unsalted butter
  • ¼ cup all-purpose flour
  • 2 ½ cups milk
  • ¼ teaspoon freshly ground nutmeg
  • 12 ounces gruyere cheese, freshly grated
  • 4 ounces parmesan cheese, freshly grated
  • ⅓ cup seasoned bread crumbs
  • Fresh thyme, for serving

Instructions

  1. Heat olive oil in a large oven-safe skillet over medium heat. Add sliced onions with salt, cooking for 10-15 minutes until softened.
  2. Reduce heat to low and caramelize onions for 60-90 minutes until golden brown, stirring frequently.
  3. Preheat oven to 375°F. Cook pasta until al dente according to package instructions.
  4. Remove caramelized onions from skillet. In the same skillet, melt butter over medium heat; whisk in flour until golden.
  5. Gradually pour in milk while stirring continuously until thickened. Mix in most of the gruyere and parmesan cheeses along with three-quarters of the caramelized onions.
  6. Fold in cooked pasta until evenly coated.
  7. Transfer mixture to an oven-safe dish; top with reserved cheeses, remaining onions, and bread crumbs. Bake for 25-30 minutes until bubbly and golden brown.
  8. Garnish with fresh thyme before serving.
