  • 2/3 cup applesauce
  • 2 eggs
  • 1 cup white sugar
  • 2 tsp vanilla extract
  • 1 cup almond flour
  • 1 1/4 cup oat flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp salted butter, melted (for the swirl)
  • 1 tbsp oat flour (for the swirl)
  • 2 tbsp white sugar (for the swirl)
  • 1/2 tbsp cinnamon (for the swirl)
  • 1/4 cup salted butter, slightly softened (for the crumble topping)
  • 1/4 cup light brown sugar (for the crumble topping)
  • 1/4 cup almond flour (for the crumble topping)
  • 1/2 cup oat flour (for the crumble topping)
  • 2 tsp cinnamon (for the crumble topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix softened butter, applesauce, eggs, sugar, and vanilla until smooth.
  3. Add almond flour, oat flour, baking powder, and salt; mix until combined.
  4. In a small bowl, stir together melted butter, oat flour, white sugar, and cinnamon for the swirl.
  5. For the crumble topping: combine brown sugar, almond flour, oat flour, and cinnamon with room temperature butter until crumbly.
  6. Grease an 8×8 baking dish. Pour half of the batter in and sprinkle with half of the cinnamon swirl mixture; gently swirl it in.
  7. Layer remaining batter on top and repeat with remaining swirl mixture.
  8. Bake for about 25 minutes; add crumble topping and bake for an additional 18 minutes until set.
  9. Allow to cool completely before slicing.
