  • 1 lb sirloin steak or steak tips, cut into bite-sized pieces
  • Salt & black pepper, to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 2 cups milk
  • 1 cup beef broth
  • 2 cups shredded sharp cheddar cheese
  • 1 tsp Dijon mustard, optional
  • 1 tsp paprika
  • 1 package (20 oz) cheese tortellini, fresh or refrigerated
  • ½ cup shredded mozzarella, for topping
  • 2 tbsp chopped parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Season steak with salt and pepper. In a skillet, heat olive oil over medium-high heat; sear steak for 2–3 minutes per side until browned. Remove from skillet.
  2. In the same skillet, melt butter and sauté minced garlic until fragrant. Whisk in flour for one minute, then gradually add milk and beef broth, stirring until smooth. Stir in cheddar cheese until melted.
  3. Cook the tortellini slightly underdone according to package instructions; drain and toss with olive oil.
  4. Grease a baking dish; combine tortellini, seared steak, and cheese sauce. Stir gently and top with mozzarella.
  5. Bake uncovered for 20–25 minutes until bubbly and golden. Garnish with chopped parsley before serving.
