  • 4 large whole wheat tortillas
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 8 ounces of fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cloves garlic, minced

Instructions

  1. Preheat your grill to medium heat.
  2. In a bowl, toss zucchini, red bell pepper, and red onion with olive oil, salt, pepper, oregano, and basil.
  3. Grill the seasoned vegetables for 5-7 minutes until tender and charred.
  4. Sauté minced garlic in olive oil; add spinach until wilted.
  5. Assemble quesadillas by layering grilled vegetables, sautéed spinach, cherry tomatoes, feta cheese, and mozzarella on half of each tortilla before folding them over.
  6. Grill assembled quesadillas for 3-4 minutes per side until golden brown.
  7. Slice into wedges and serve warm.
