  • 2 cloves garlic, crushed
  • 1/4 cup chopped sun-dried tomatoes (not in oil)
  • 2 tablespoons blended cottage cheese
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon Italian seasoning
  • 1 teaspoon olive oil
  • 2 tablespoons cornstarch
  • 3 tablespoons chopped fresh basil

Instructions

  1. Season chicken breasts with kosher salt and pepper.
  2. In a skillet over medium heat, sauté shallots and garlic in olive oil for about 2 minutes until fragrant.
  3. Sear seasoned chicken breasts for 2–3 minutes on each side until golden brown.
  4. Transfer chicken to the slow cooker; add sun-dried tomatoes and chicken broth.
  5. Cook on LOW for 4–6 hours until the internal temperature reaches 165°F.
  6. About 30 minutes before serving, mix cornstarch with water to create a slurry; stir into sauce to thicken.
  7. Once cooked, stir in grated Parmesan and blended cottage cheese until smooth.
  8. Serve garnished with fresh basil.
