  • 1 1/4 cup granulated sugar (divided)
  • 1 egg yolk (large)
  • 1 tsp vanilla extract (pure)
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs (room temperature)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a standard muffin tin with paper liners.
  2. For the filling: Beat softened cream cheese with 1/4 cup sugar until smooth. Mix in egg yolk and vanilla; set aside.
  3. In a large bowl, whisk together flour, baking soda, salt, and spices.
  4. In another bowl, combine remaining sugar, pumpkin puree, vegetable oil, eggs, and vanilla until smooth.
  5. Fold dry ingredients into wet ingredients until just combined; avoid overmixing.
  6. Fill muffin liners halfway with batter. Add a teaspoon of cream cheese filling in the center and cover with more batter.
  7. Bake for 18–22 minutes or until a toothpick inserted comes out clean. Cool before frosting.
