  • 1/4 cup honey
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup granulated sugar
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 stick (1/2 cup) softened butter for frosting
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract for frosting
  • Pinch of salt for frosting
  • 1/4 cup honey for frosting

Instructions

  1. Preheat oven to 350°F (175°C). Line muffin tins with paper liners.
  2. In a large bowl, whisk together milk, vegetable oil, honey, eggs, and vanilla until well combined.
  3. Add granulated sugar to the wet mixture and blend. Gently fold in flour, baking powder, and salt until just combined.
  4. Divide batter into muffin tins, filling each about two-thirds full. Bake for 15–17 minutes or until a toothpick comes out clean.
  5. Allow cupcakes to cool completely on a wire rack before frosting.
  6. For the buttercream: Beat softened butter and honey together; gradually add powdered sugar while mixing on low speed. Increase speed to high until fluffy.
  7. Frost cooled cupcakes and enjoy!
