  • 4 salmon fillets (about 6 oz each)
  • 1 tbsp olive oil
  • ⅓ cup honey
  • ¼ cup low sodium soy sauce
  • ½ cup fresh pineapple juice
  • 2 cloves garlic, minced
  • 1 tbsp lime juice
  • 1 tsp grated fresh ginger (optional, for extra depth)
  • ½ tsp red pepper flakes (optional, for heat)
  • 1 cup fresh pineapple, diced
  • ¼ cup red bell pepper, finely chopped
  • ¼ cup red onion, finely chopped
  • 1 tbsp cilantro, chopped
  • ½ tsp honey
  • Pinch of salt

Instructions

  1. Pat the salmon fillets dry and season both sides with salt, black pepper, and paprika.
  2. Heat olive oil in a skillet over medium-high heat. Sear the salmon fillets skin-side down for 3-4 minutes until golden brown.
  3. In the same skillet, reduce heat to medium. Add honey, soy sauce, pineapple juice, minced garlic, lime juice, ginger (if using), and red pepper flakes. Simmer for about 3-4 minutes until slightly thickened.
  4. Return the salmon to the pan and spoon the glaze over each fillet. Cook for another 2-3 minutes until fully cooked through.
  5. For the salsa, mix diced pineapple with chopped bell pepper, onion, cilantro, lime juice, honey, and a pinch of salt in a small bowl.
  6. Serve glazed salmon over rice or quinoa topped with salsa.
