  • 1/3 cup all-purpose flour (for crumb topping)
  • 1/2 cup chilled unsalted butter (for crumb topping)
  • 6 to 8 large apples (about 3 1/2 pounds; a mix of Granny Smith and Honeycrisp works well)
  • 1/3 cup granulated sugar (for filling)
  • 1/4 cup packed brown sugar (for filling)
  • 4 tablespoons cold unsalted butter, cut into 1/4-inch dice (for filling)
  • 1 TBSP plus 1 tsp cornstarch
  • 2 tsp vanilla extract (alcohol-free)
  • 1 tsp dry pectin or an extra 1/2 tsp cornstarch
  • 1/2 tsp ground cinnamon
  • 1/4 tsp freshly grated nutmeg
  • 1/4 tsp kosher salt
  • 1 cup brown sugar (for sauce)
  • 1/2 cup light corn syrup
  • 3 tbsp unsalted butter (for sauce)
  • 1 1/2 tsp kosher salt (for sauce)
  • 1/2 cup heavy cream
  • 1 TBSP spiced vanilla extract (alcohol-free)

Instructions

  1. Prepare the crust by mixing flour, salt, and sugar; pulse in cold butter until crumbly. Add ice water gradually; chill.
  2. Roll out the dough and fit it into a pie pan; crimp edges.
  3. For the crumb topping, mix sugars, cinnamon, salt, and flour; pulse in butter until crumbly.
  4. Sauté sliced apples with sugars until tender; cool slightly then combine with spices and cornstarch.
  5. Assemble by pouring filling into the crust and topping with crumbs.
  6. Bake at 350°F (175°C) for about an hour, covering halfway through.
  7. Prepare the hot buttered sauce by boiling sugar, corn syrup, butter, and salt until syrupy.
