  • 1/2 cup unsalted butter, melted
  • 1 cup old-fashioned oats
  • 1 cup + 2 tbsp all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp molasses (or honey)
  • 1/2 cup powdered sugar, sifted
  • 12 tbsp whole milk
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, melt butter and let cool slightly.
  3. Pulse oats in a food processor until coarsely chopped.
  4. In another bowl, whisk together oats, flour, baking soda, cinnamon, and salt.
  5. Mix melted butter with granulated and brown sugars until combined.
  6. Add egg, vanilla extract, and molasses (or honey) to the butter mixture; mix well.
  7. Fold dry ingredients into the wet mixture until just combined.
  8. Pour batter into the prepared pan and bake for 20-24 minutes until golden brown.
  9. Allow to cool completely before icing.
