  • 3 medium jalapeno peppers
  • ½ cup peach preserves
  • 2 tablespoons extra virgin olive oil

  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic, minced
  • ⅛ teaspoon red pepper flakes
  • 15 wooden skewers, soaked in water for 30 minutes

Instructions

  1. Soak 15 wooden skewers in water for 30 minutes.
  2. Cut chicken into 1-inch cubes and season with salt, pepper, and chili powder.
  3. Thread marinated chicken, peach quarters, and jalapeno chunks onto the soaked skewers.
  4. In a bowl, whisk together peach preserves, olive oil, soy sauce, apple cider vinegar, minced garlic, salt, pepper, and red pepper flakes to create the glaze.
  5. Preheat your air fryer to 400°F (200°C) and cook the skewers for about 11 minutes, brushing with glaze halfway through.
  6. Remove from air fryer and let rest before serving.
