  • 1/4 cup soy sauce
  • 2 tablespoons gochujang (Korean red pepper paste)
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame seeds
  • 1/4 teaspoon black pepper
  • 2 cups cooked rice (white or brown)
  • 1 cup kimchi
  • 1 cucumber, thinly sliced
  • 1 carrot, julienned
  • 2 green onions, chopped
  • 1 tablespoon toasted sesame seeds for garnish

Instructions

  1. In a mixing bowl, whisk together soy sauce, gochujang, honey, minced garlic, grated ginger, rice vinegar, sesame seeds, and black pepper.
  2. Add chicken thighs to the marinade and coat well. Cover and refrigerate for at least 1 hour or overnight.
  3. Preheat grill to medium-high heat. Grill marinated chicken for about 6-7 minutes per side until fully cooked. Let rest before slicing.
  4. Assemble bowls with cooked rice as the base and top with sliced grilled chicken, cucumber slices, julienned carrots, and kimchi.
  5. Garnish with chopped green onions and toasted sesame seeds before serving.
