  • 3 tablespoons brown sugar
  • 1 tablespoon honey
  • 2 tablespoons gochujang
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 4 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • 3 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 medium carrot, julienned
  • 2 tablespoons mayonnaise
  • 1 teaspoon sugar
  • Salt and black pepper to taste
  • 4 brioche or potato sandwich buns
  • Butter for toasting buns

Instructions

  1. Prepare the marinade by mixing soy sauce, brown sugar, honey, gochujang, rice vinegar, sesame oil, minced garlic, and grated ginger in a bowl.
  2. Marinate the chicken thighs in the mixture for at least 15 minutes (or longer for deeper flavor).
  3. Cook the marinated chicken in a grill pan over medium-high heat for 6-7 minutes on each side until fully cooked.
  4. In another bowl, combine shredded cabbages and julienned carrots with mayonnaise, rice vinegar, sugar, salt, and pepper to create the slaw.
  5. Toast the sandwich buns lightly with butter until golden brown.
  6. Assemble by placing sliced chicken onto each toasted bun and topping generously with cabbage slaw.
